Why I Conture

When I was a little girl I rarely wore sunscreen and when I was in college I visited the tanning salon on a regular basis. I’ll admit I wasn’t very health conscious when it came to my skin, but it’s never to late to start caring for your skin.

Green Mac & Cheese the Kids Will Love

Strolling through Costco the other day, my one-year-old daughter and I passed by the bulk pack of Kraft Macaroni and Cheese. Immediately, she shouts “noodles” at the top of her lungs and attempts to dive out of the shopping cart, lunging toward the macaroni.

I put her and the box of mac & cheese securely in our cart and chuckled a bit to myself as we continued down the aisle. I can definitely relate to her reaction- who doesn’t love some classic macaroni and cheese?

While we often buy the blue box stuff, sometimes it’s fun to mix up the standard mac & cheese and give it a healthy, homemade twist. With St. Patrick’s Day approaching, I thought my daughter might enjoy a green mac & cheese.

She was excited to devour these “green noodles” (as she calls them), made with quality ingredients like whole grain noodles and spinach, and full of color and flavor that surely appeals to the younger crowd.

Ingredients

  • 1 box (12oz,) whole grain noodles (I recommend a thicker-style noodle, such as spirals, elbows, shells, or ziti)
  • 1 package Mac and Cheese Blend shredded cheese (I have found this at both Target and Food Lion. If you can’t find it at your store, any cheddar blend will work. I have also made this with 6-Cheese Italian Blend for an Italian twist-delicious!)
  • 1 package frozen spinach
  • 1½ cup milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 tablespoon garlic powder
  • Pinch of ground nutmeg
  • Salt and pepper to taste

Directions

1. Cook spinach according to package directions.

2. Cook pasta in boiling water, according to package directions.

3. In a blender or food processor, combine milk, ½ cup of the cooked spinach, garlic powder, nutmeg, and salt/pepper. Puree until completely blended and smooth.

4. In a sauté pan over medium/medium-low heat, melt butter, then whisk in flour.

5. Slowly pour in milk-spinach mixture, whisking constantly. Allow sauce to thicken slightly.

6. Add cheese, one small handful at a time, whisking in a figure-8 motion until the cheese has dissolved into the sauce.

7. Adjust seasoning as desired.

8. Combine sauce and noodles and serve. (Tip: I would add sauce one ladle-full at a time to the noodles so your noodles won’t drown in too much sauce)

Bonus Tip

Extra sauce can be frozen for future use. I usually freeze it in ice cube trays, creating individual 1oz. servings of sauce. Then, I will simply microwave a few cubes to top a quick side serving of pasta or even vegetables!

Everything you Want to Know About Classes at Little Gym of Huntersville/LKN

Now that you and your child have settled into a great school routine, it’s a perfect time to add in and educational, athletic, extracurricular activity.

You’ve probably heard me talk about The Little Gym of Huntersville/Lake Norman before, and after having two little girls go through various programs, camps, and events that Little Gym offers, I’d like to consider myself a little bit of a mom expert when it hoes to Little Gym. Perhaps that’s one reason I represent The Little Gym of Huntersville/LKN as Mombassador.

Today I’ll answer some common questions you may have about The Little Gym of Huntersville/LKN referred to throughout the rest of this post as TLG.

What classes does TLG offer? TLG offers a wide variety of classes including gymnastics, sports, and dance.

What is the age range for classes at TLG? TLG welcomes children ages 4 months through 12 years.

Where is TLG located? TLG Huntersville/LKN is located at exit 23 off Route 77. It is nestled with some great shops right off Gilead Road and close to Presbyterian Huntersville and Earth Fare.

What’s the best way to see if my child likes a class? Sign up for a FREE “Intro” class for the age group that fits your child’s age. Also, if your child has a friend who is currently enrolled, they may join their friend for a “bring a friend” class {as long as they are in the same age group for the class}, please make sure you or the member calls to let TLG know that you’re coming, we love visitors and want to make sure we’re well staffed!

Why should I choose TLG as an activity for my child? TLG teaches children how to be active, have fun, learn life-skills, in a non-competitive, nurturing setting. As a Little Gym mom, I’ve seen my girls learn real skills in their dance and gymnastics classes, make some great friends, learn to respect their teachers, and have seen them grow. I am only speaking for TLG Huntersville/LKN, but the teachers and staff are amazing and are more than people we see twice a week. Instructors take the time to get to know each child individually and on a personal level. That means a lot to me as a mom that my family isn’t only dollar signs to a business.

What is the makeup policy? Unlike many gym and dance programs, TLG offers makeup classes for members who notify TLG in advance, before class begins. Makeup classes must be scheduled in advance to ensure there is the appropriate child to teacher ratio, and do carry over to additional semesters so long as your child is enrolled.

Can I see my child during class? Often programs do not allow you to stay for classes or you must view on a closed-circuit television, however TLG Huntersville/LKN offers you and your child the comfort of being able to see each other during class. For the timid child this gives a sense of security. It also allows for family members to watch your child perform and gives children a sense of accomplishment.

For the non parent-child classes, TLG hosts a couple of parent involvement classes where parents/family are able to join students in their classes and participate.

How much does it cost? Price varies depending on your payment plan, and when you start your child in classes. There is a once a year registration fee per family and parents may sign their children up for Parent Survival Night, camp, or host birthday parties at TLG for an additional fee. However the initial trial class is always FREE!!

How do I sign my child up?

Check out the Programs and Classes schedule HERE, select a time and age group that fits your child’s needs and call TLG directly or sign up via their website for your child’s first class! For any questions TLG is very helpful and knowledgeable about the best options for your family.

Hopefully I’ve been able to not only answer some questions you may have, but also spark your interest in what I think has been one of the most valuable investments our family has made in the development of our children.

Easy, Delicious, Healthy Radish Recipes

Thank you Duda Farm Fresh Foods for samples of your Dandy Ministick Radishes so I could whip up these tasty and healthy recipes.

If you’ve been keeping up with my posts you’ve probably read that my family and I are experimenting with new foods. We tried cauliflower pizza/breadsticks, and kale chips. Both of which have gone pretty well with the family, although they prefer the cauliflower pizza, I must say I love both.

When I was approached by Duda Farm Fresh Foods to review their Dandy Ministick Radishes, I thought it would be a fun “challenge” to get my family to eat radishes and also try new healthy recipes.

Of course I scoured the web researching radish dishes, reading more on the nutritional values and studying good pairings with other foods. Here are some creations I made and other easy, delicious, healthy radish recipes for you.

Last week, I made pulled pork for the first time ever for a great family who welcomed a beautiful little boy into the world. Luckily the pulled pork tasted great and was a hit for that family, and I had some left over. Keeping with the healthy eating, instead of putting the pulled pork on sliced bread or a bun, I though it would be yummy to try out a pulled pork lettuce wrap topped with delicious ministick radishes.

Here’s how they turned out:

And here’s how I made my Pulled Pork Spinach Wraps:

First make your Pulled Pork:

– Start with a 4-5lb Pork Roast {shoulder or butt works best}.

– For optimal flavor marinade for 1-12 hours before placing in your slow cooker.

– Create a wet rub for the pork roast using the following ingredients:

  • 2 Garlic Cloves pressed from fresh or 2 teaspoon of canned {olive oil preferably}
  • 2 tablespoon Kosher Salt
  • 1 to 2 tablespoons of pepper {more for a spicier taste}
  • 1/4 cup of brown sugar
  • 1/4 cup of stone ground mustard {or more for spicier taste}

Unwrap your roast, removing all strings from the roast, placing it on a cutting board or shallow dish perfect for covering with your rub and/or leaving to marinate.

Mix your rub together until all ingredients are combined, place the rub on all sides of the roast coating sides well. Cover and marinate.

When done marinating, place the roast in your slow cooker set to high, {I recommend using Reynolds Slow Cooker Liners for easy cleanup} and add 1 cup of water for a deliciously moist roast.

Let your roast sit for about 6 hours, {if you’re like me you may want to flip your roast over mid-way at the 4 hour point.}

Once done, carefully remove your roast from your slow cooker and shred the meat using two forks.

Place the shredded pork in a mixing bowl, and incrementally add tablespoons of your favorite barbecue sauce until you reach your desired taste level.

After your pork has cooled a little glean through your spinach leaves {I recommend not using baby spinach for the best size wraps.

Place your spinach leaves in positions conducive for optimal pulled pork holding, top with delicious, crunchy Dandy Ministick Radishes and voila, an easy, healthy, delicious meal:

New Additions to The Little Gym

I’m excited to share with you a few new additions to The Little Gym of Huntersville/Lake Norman’s awesome program.

Little Gym Classes

Children ages 2 and up can now enjoy dance class at The Little Gym of Huntersville/Lake Norman. The brand new Jazzy Beast program is the first dance centered Parent/Child class and begins at age 2.

Speaking of dance, Little Gym is now adding Hip Hop classes, yep you heard me right, Hip Hop. These classes are available for children ages 4 and up and are already open for enrollment. Make sure you sign up soon as spots are really filling up!

Little Gym Lego DuploThe Little Gym International just announced a partnership with LEGO DUPLO and The Little Gym Huntersville/Lake Norman will begin their, “Let’s Build, Let’s Play!” events for Parent Child age children in the Fall. Great for parents who have children under 3 who are unable to participate in Summer Camps and Parent Survival Nights.

Another announcement from The Little Gym International is their exclusive toy line partnership. They are developing educational toys/activities that will bring their signature 3 dimensional learning concepts straight into your home. So keep your eyes peeled for these great play tools.

So there you have it, a few GREAT new things that are new to The Little Gym and a few that are in the works to look out for. Healthy Resolutions for Kids {Giveaway}

Have you made resolutions for yourself, perhaps to live a better, healthier life? Do you make family resolutions? How about resolutions for your children? My girls are still pretty young, but there are things I hope, dream, and pray for them this year. I want Miss A to do well in school, I want Lil C to flourish as her own individual, and of course I hope that they are both loving, caring people who think of others, among many, many other traits and values.

In general, my girls are pretty healthy when it comes to eating, being active, and overall health, which we are very blessed by. However, there are always improvements we like to make to continue to give them the best lives possible, and I’m guessing if you’re still reading this post, you may have a special child(ren) in your life that you care about as well.

Here are some of my personal tips that I’ve used to encourage health in my girls lives and also some that we will begin to implement and work on.

Get Active!

Whether you participate or not {strongly recommended}, take your kiddos to the park, enroll them in sports classes, go for a family hike. It’s great for them physically, but also builds confidence, if done in a group encourages social growth, and makes them happier *see endorphins.

Have Fun with Food

We like to make food faces on pancakes, drink out of fun straws, cook together, make mustaches out of everything, especially milk and color our foods with food coloring to brighten up any plate.

Enrich their Lives

Give your child opportunities to volunteer, and learn about a senese of community. Visit museums and historical landmarks. Let them express themselves through art, dance, writing, help them find their best means of self-expression and celebrate it!

Make Healthier Choices

Trade out treats for fruits, hide veggies where the kids will least expect it, and make sure your children get plenty of hormone-free calcium. Since Lil’ C was 1 year old we’ve been trying to get her to drink milk, any kind of milk, soy, almond, chocolate, and used every trick in the book, we’ve given it a few months and just last night at dinner, because “sissy” LOVES milk {and if I could caps the LOVES even bigger I would, I have not seen a child who enjoys milk more than Miss A} we offered Lil’ C a medicine cup of Smart Balance® Kids Milk and she drank it! früsh Gets Bloggy in Charlotte

früshEvery time I get together with local bloggers we always say we need to do it more often and include more people. I knew I wanted to host a get together, and when früsh contacted me, I thought how great it would be to have a blogger party sponsored by them. Since my mansion is being renovated, I had to throw the party at my smaller house in the suburbs, thus limiting the invitee list. It was so great to get together, I realized a bunch of the ladies had known each other online but had not yet met in person and our kids had a blast too!! I decided to give the party a spring theme since früsh reminds me of freshness and spring envelopes that fresh feeling. The colors were fun and bright and the food was brunch style and kid friendly. As I mentioned, früsh is a delicious and healthy yogurt fruit shake perfect for moms-on-the-go like us bloggers, and good for our kids too!! Everyone was able to sample ice-cold früsh, with the adorable tasting cups I found. früsh currently comes in four flavors; Blueberry, Strawberry, Peach, and Strawberry Banana. There wasn’t really a “fan-favorite” but I did keep hearing a lot about the Blueberry and Peach especially, and one little guy really loved his:

I had an amazing time hanging out with these bloggers, talking about früsh, upcoming conferences, and being moms {or getting ready to be one.} I think the one thing we all have in common {other than blogging, and living in charlotte, and being moms} is wanting to give ourselves and our families healthy options, especially when we’re trying to grab something quickly. früsh gives us another alternative by giving us more calcium and protein than some of the leading smoothies out there great which is great for our bodies and the growing bodies we take care of.

What’s really cool to me is that the makers of früsh, Origin Food Group, is based in Statesville, N.C. and can also be found locally in your area Lowe’s Food store, Ingles Markets, and Bi-Lo. The other day I was talking about supporting local and while früsh hopefully will be available world wide it’s pretty cool that it’s starting here in the Carolinas.
